Spicy Enfrijoladas con Pollo

15 Oz canned black beans
1/4 cup(s) Humble House Habanero & Aji Amarillo Sauce
1 Tbsp fresh garlic, finely chopped
1 Tbsp olive oil
8 H-E-B Homestyle Corn Tortillas
1/4 cup(s) sweet onion, very finely diced
1 1/2 cup(s) fully cooked shredded chicken, (about 1/4 pound)
1 1/2 cup(s) Mi Comida Shredded Mexican 6 Cheese blend, (about 6 oz)

Pre-heat oven to 350 degrees. Lightly oil a 9" X 13" pan with a few short bursts or drops oil. Set aside.

Add contents of bean can to food processor (including liquid) . Add hot sauce, garlic, salt and olive oil to food processor. Pulse until very smooth. Pour 3/4 of mixture onto a plate.

Heat tortillas in microwave for 20 to 30 seconds, just until warm and bendable. Dip each tortilla in bean mixture one at a time. Fill each with onion, chicken and a sprinkle of cheese. Line up in prepared pan, side by side touching each other.

Pour remaining bean mixture over the top. Add remaining cheese on top. Cook for 12 to 15 minutes- just until cheese is melted and lightly brown on top.

Chef's note: Garnish with cilantro, sour cream and avocado if desired and serve.
