1 Lb Natural Ground Angus Beef 85% Lean
1 Lb Natural Ground Pork 90% Lean
1 1/2 cup(s) H-E-B ITZ-A Cracker, pulsed into breadcrumbs in a food processor or crush by hand in a zip close bag
3/4 cup(s) Grated Pecorino Romano cheese
1 cup(s) cold water
2 large Large eggs
1/2 cup(s) fresh Italian parsley, chopped
1/3 cup(s) Fresh basil, chopped
1/2 Tsp Kosher salt
1/2 Tsp Ground black pepper
2 Tbsp Extra virgin olive oil, divided use

Preheat oven to 350°F.

In a large bowl, mix ground meat with cracker crumbs, cheese, water, eggs, parsley, basil, salt and pepper. Mix well by hand to incorporate everything.

Form meat mixture into approximately 24 golf ball sized meatballs. Place meatballs into two 9"x13" oven safe casserole dishes with 1 tablespoon of olive oil in each.

Bake for 30-40 minutes, or until meatballs look browned and oil is bubbling. (The internal temperature should read 165°F.)

Remove meatballs from oven and allow them to cool.

Serve by themselves or put them into a pot of pasta sauce and simmer for an hour before serving over spaghetti.
