Slow Cooker Broccoli Cheese Soup

Recipe makes 8 Servings

4 cup(s) broccoli florets
1 cup(s) match stick carrots
1 cup(s) onion, diced
1 Tbsp garlic, minced
3 1/2 cup(s) low sodium chicken broth
8 Oz neufchatal cheese
2 cup(s) evaporated milk
1/2 cup(s) H-E-B Shredded Low-Fat Cheddar Cheese
1/4 Tsp salt
1 1/2 Tsp black pepper

Instructions

Place broccoli, carrots, onions, garlic, chicken stock and cream cheese into slow cooker. Cook on high for 2 hours.

Working in batches, transfer 1/2 of the broccoli soup mixture to a blender, and pulse until smooth.

Return mixture to crock pot along with evaporated milk.

Cook 30 to 45 minutes longer then stir in cheese and cook until melted. Season with salt and pepper and serve.
