Sizzling Shrimp with Garlic (Gambas al Pil Pil)

1 Lb H-E-B Texas Farm Raised Shrimp, peeled and deveined
1/2 Tsp kosher salt
4 garlic cloves, slivered or coarsely chopped
1/4 Tsp crushed red pepper flakes
1 1/4 cup(s) Seville Spain Extra Virgin Olive Oil
1 Tbsp salted butter
1 Tsp smoked paprika

Instructions

Preheat oven to 500°F (recipe can also be done on the grill).

Mix shrimp with salt, garlic and pepper flakes. Cover and sit at room temperature about 15 minutes while oven or grill is heating.

Pour oil and add butter to a small, oven safe skillet. An 8 inch diameter cast iron skillet is ideal, but any oven safe pan will work as long as it is not a non-stick, Teflon coated pan. Place pan in hot oven and heat oil 10 minutes, or until very hot.

Carefully remove pan from oven and immediately add shrimp to hot oil. This is best done by sliding them gently down a cutting board or plate to prevent splashing. Sprinkle smoked paprika over shrimp immediately and stir gently.

Shrimp will sizzle and cook in hot oil.

Serve sizzling shrimp straight from the pan with plenty of hot fresh bread for dipping.

Chef's Note: This is a classic tapas-style appetizer from southern Spain, but makes a great meal solution served over basmati rice.
