Ingredients

Recipe makes 36 Servings

8 Oz salted butter, room temperature
3/4 cup(s) Sola Sweetener
1 cup(s) cocoa powder
1 Tbsp vanilla extract
1 cup(s) liquid egg whites
1/2 cup(s) coconut flour
4 eggs, beaten
1/3 cup(s) bittersweet chocolate (70% cacao), melted

Instructions

Cream butter and sweetener together. Scrape the bowl then add cocoa powder and vanilla. Mix well and let stand.

Meanwhile in a separate bowl, whip egg whites with a hand mixer to stiff peaks. Set aside.

To the butter mixture, add coconut flour, beaten eggs and melted chocolate, and mix on medium speed until smooth.

Remove bowl from mixer, then fold in 1/3 of the whipped egg whites until completely incorporated. Repeat the process 2 more times until all the egg whites are incorporated.

Transfer to a greased 8 x 8-inch baking dish. Bake 35 to 40 minutes or until a toothpick inserted into the center comes out clean. Let cool then cut into 36 squares.
