2 1/2 Lb H-E-B Natural Center Cut Pork Loin Roast
3 Tbsp Adams Reserve Sweet Pork Rib Rub
9 H-E-B Peeled Garlic Cloves
3 sprigs of fresh rosemary
2 sprigs of thyme
2 Tbsp Rustico Unfiltered Extra Virgin Olive Oil
2 Tbsp H-E-B Unsalted Butter
8 fl oz Fischer & Wieser Four Star Provisions Raspberry Chipotle Sauce

Instructions

Preheat oven to 350ºF.

Score top of roast then cut three deep slits along each side.

Season both sides of roast with sweet pork rub.

Stuff each of the side slits with a garlic clove and 1/3 of a sprig of rosemary.

Stuff the top score with three garlic cloves, one rosemary sprig, and thyme sprigs.

Heat olive oil in a medium skillet over medium-high heat. Sear roast on both sides for 1 to 2 minutes or until a nice crust forms. Transfer to an oven-safe pan.

Place in oven for 40 minutes, or until internal temperature of roast reaches 140ºF.

Meanwhile, melt butter in a small saucepan over medium heat. Add in raspberry chipotle sauce and stir to combine.

Pour sauce over pork and return to oven for another 5 minutes. Internal temperature should be 145ºF. Remove and let rest 5 minutes before serving.
