Menudo Spiced Pork Carnitas Taco Salad

Recipe makes 6 Servings

3 Lb boneless pork butt, cut into bite sized cubes
2 Tbsp Fiesta Brand Menudo Spice Mix
2 Tsp kosher salt, plus more as needed to taste
2 Tsp ground black pepper, plus more as needed
1/3 cup(s) water
16 Oz H-E-B Shredded Lettuce, 2- 8oz bags
12 Oz H-E-B Pico de Gallo, drained of all juices
1/2 cup(s) fresh cilantro, roughly chopped
2 cup(s) H-E-B Restaurant Style 50/50 Blend Cheese, plus more as needed to garnish

Instructions

Place pork into Instant Pot along with menudo spice, salt and pepper. Toss everything to coat pork well with seasoning.

Add water, seal with lid and set Instant Pot to meat/stew function and add 10 additional minutes to cook time.

Once pork is cooked, allow pressure to release according to Instant Pot directions. Shred and place pork in a bowl to cool slightly.

Meanwhile, assemble salad by placing lettuce into a bowl, toss it together with pico de gallo, cilantro and shredded cheese.

Add shredded pork, garnish with more cheese and serve with sour cream and guacamole if desired.

Chef's Note: Use any dressing desired for salad; I usually just use sour cream and add lime juice, salt and pepper, then toss everything together.
