2 Tsp olive oil
1/2 cup(s) white onion, diced
2 garlic cloves, chopped
2 Tbsp chopped Hatch chilies
1/2 cup(s) Carne Seca Doña Blanca's Gourmet Dried Beef
1/2 cup(s) water
4 large eggs

Instructions

In a large sauté pan over medium high heat add oil and brown onions and garlic for 3 minutes stirring occasionally.

Add chopped chilies and dried beef, then sauté until well incorporated.

Add 1/2 cup water and stir until mostly absorbed, about 2 to 3 minutes.

Using a spoon or flat spatula, form a well in the middle of pan.

Crack eggs directly into well and slightly scramble, then fold meat mixture into eggs.

Cook about 2 minutes or until eggs are fully cooked.

Serve in flour tortillas and garnish with hot sauce, cheese, or your favorite breakfast taco toppings.
