Recipe makes 12 Servings

12 Jimmy Dean® Original Fully Cooked Pork Sausage Patties, coarsely chopped
1/2 cup(s) red bell pepper, chopped
1/2 cup(s) green bell pepper, chopped
12 eggs
1/4 cup(s) milk
1 Tbsp butter
12 corn tortillas
1 cup(s) shredded cheddar cheese
1/4 cup(s) fresh cilantro, chopped

Instructions

Cook sausage and bell peppers in large non-stick skillet over medium heat 5 to 6 minutes or until sausage is thoroughly heated, stirring frequently. Remove from skillet and cover to keep warm.

In a large bowl, beat eggs and milk with wire whisk until well blended. Melt butter in same skillet over medium-low heat. Add eggs; cook 6 to 8 minutes, stirring the entire time. Stir in sausage mixture; cook 1 to 2 minutes or until thoroughly heated. Remove from heat.

Top each tortilla with about 1/2 cup egg mixture, 1/2 cup cheese and 2 tablespoons cilantro.
