Grilled Mexican Street Corn

6 Corn on the cob
1/2 cup(s) Mayonnaise with lime, or mayonnaise
1/2 cup(s) Grated Cotija cheese
1 Tsp Cayenne pepper

Instructions

Preheat grill to 400ºF.

Remove husks and silk from corn.

Place corn directly on grill (no oil needed) and rotate every 3 to 4 minutes until grill marks form and corn is lightly colored. Remove from grill and allow to cool a little.

Brush jalapeño ranch or mayo evenly on corn then dredge in Cotija cheese until fully coated on all sides.

Sprinkle with cayenne pepper to add color and spice. Serve warm.
