8 Texas Pie Company Pie Shells
6 large eggs, plus 1 to 2 more eggs whisked together and brushed on pie shells
1 cup(s) heavy whipping cream
1 Tsp kosher salt, plus more as needed
1 Tsp cracked black pepper, plus more as needed
4 Oz crumbled goat cheese
1/4 cup(s) fresh chives, as needed for garnish on each
1 cup(s) Fontina cheese, grated, as needed

Instructions

Preheat oven to 350˚F.

Brush pie shells with egg and place them onto a sheet pan lined with parchment paper. Bake shells for 15 to 20 minutes or until just starting to change color to light brown.

While shells bake, in a bowl add eggs, heavy cream, salt and pepper, whisk together.

Remove shells from oven and allow them to cool slightly before pouring egg mixture evenly into each shell.

Add crumbled goat cheese to each followed by chives and Fontina cheese. Place filled quiches back into oven and cook until just puffed and egg is fully set in middle. Approximately 20 to 30 minutes.

Allow to cool before serving.
