Recipe makes 8 Servings

1 cooking spray
2 avocado, halved, seeds removed and skin on
1/2 white onion
2 greenhouse tomatoes
2 jalapeno pepper
1/3 cup(s) chopped cilantro
1 Tbsp lime, juiced
1/2 Tsp salt
1/2 Tsp pepper

Instructions

Preheat grill to medium-high heat.

Spray cooking oil lightly on the avocado, onions, tomatoes, and jalapeños.

Place on grill. Allow vegetables to grill for several minutes until nice char marks are achieved.

Remove vegetables from grill and allow them to cool slightly.

Chop the onion, tomatoes, jalapenos, and avocado. Add in cilantro, lime juice, salt and pepper. Mix well and serve with your favorite chips or veggie dipper.
