Ingredients

Recipe makes 6 Servings

1 Tbsp olive oil
8 Oz sliced mushrooms
26 Oz H-E-B Fully Cooked Chicken Thigh Fajitas
32 1/2 Oz Cookwell & Company Texas Ranch Casserole
1/2 cup(s) half and half
6 H-E-B Mixla Tortillas, sliced into strips
1 cup(s) shredded Mexican cheese blend

Instructions

Preheat oven to 425ºF. Place a large pan over medium-high heat.

Add oil and mushrooms. Sauté mushrooms for 4 to 5 minutes, just to begin to brown.

Add chicken fajitas, Texas Ranch starter and half and half to pan, bring to a simmer.

Layer tortillas, chicken mixture and cheese in a 9" X 13" pan, top with cheese.

Bake for 15 to 20 minutes, or until cheese begins to bubble and brown around the edges.

Chef's Note: Garnish as desired with fresh ingredients such as cilantro, avocado and salsa.
