Crispy Roasted Garlic Swai

Ingredients

Recipe makes 4 Servings

4 Swai fillets, (may also be called Pangasius)
1 cup(s) all purpose flour
2 eggs, beaten
1 1/2 cup(s) Panko Bread Crumbs, Roasted Garlic Flavor
1 Tsp dried basil
1/4 cup(s) grapeseed oil

Instructions

Gently wash fish fillets and pat dry with a paper towel.

Spread flour evenly on a dinner sized plate.

Place beaten eggs in a shallow pie pan.

Spread bread crumbs out on another dinner plate. Mix basil through bread crumbs with a fork.

Evenly and completely coat each fish fillet in flour, eggs, then bread crumb mixture.

Place on a plate and chill while skillet heats up.

Heat a large skillet over medium heat. Add oil and let it get hot, but not smoking.

Add fish fillets two at a time to pan and sear 4 to 5 minutes on each side, or until a crispy golden brown crust is formed on each side. Remove from pan, and keep warm.

Carefully wipe crumbs from pan using a paper towel and tongs. Repeat process with remaining oil and 2 fish fillets.

Serve immediately with pasta or rice.
