2 Tbsp H-E-B Extra Virgin Olive Oil
1 1/2 cup(s) celery
1 1/2 cup(s) sweet onion, chopped
1/2 cup(s) red bell pepper, chopped
16 Oz H-E-B Corn Bread Stuffing
14 Oz H-E-B Select Ingredients Chicken Broth
1 1/2 cup(s) water
1/8 Tsp H-E-B Iodized Salt
1/8 Tsp H-E-B Black Pepper

Instructions

Heat oven to 350°F.

Spray a 9" x 13" baking dish with nonstick cooking spray and set aside.

Heat a large skillet over medium heat for 2 minutes.

Add olive oil, celery, onions and bell pepper and stir-fry for 5 minutes or until onions are tender.

In a large mixing bowl, combine cooked vegetables with corn bread stuffing, chicken broth and 1 1/2 cups water.

Season stuffing with salt and pepper and spoon into the prepared baking dish.

Loosely cover with a sheet of sprayed foil and bake on center oven rack for 20 minutes.

Remove foil and bake 5 more minutes.
