Collard Greens With Bacon

1 collard greens bunch
2 bacon slices
1/2 cup(s) white onion, chopped
1/8 Tsp salt
1/8 Tsp black pepper

Instructions

Wash collard greens; trim and discard stems. Chop coarsely and set aside.

Cook bacon in a large skillet over medium-high heat for 5 minutes or until crisp.

Remove bacon with a slotted spoon to a paper towel to drain. Discard all but 1 tablespoon of bacon drippings from skillet.

Sauté onion in bacon drippings for 5 minutes. Season with salt and pepper.

Gradually add collard greens, stirring frequently. Reduce heat to medium, cover skillet and cook 5 minutes.

Crumble bacon, sprinkle over top and serve immediately.
