Classic Green Peppercorn Sauce for Steak

Ingredients

Recipe makes 10 Servings

2 Tbsp salted butter
1/4 cup(s) shallots, finely chopped
1/3 cup(s) brandy
1/2 Tsp white pepper
3 cup(s) chicken stock
3 cup(s) beef stock
2 cup(s) heavy cream
3 Tbsp cornstarch
1 Tbsp green peppercorns, roughly chopped

Instructions

Melt butter in a saucepan over medium-high heat.

Add shallots and sauté until they start to turn translucent but not brown.

Stir in brandy and let simmer and reduce until nearly gone, about 2 to 3 minutes.

Add white pepper, chicken stock, beef stock and cream. Simmer and stir frequently until sauce is reduced by half, about 30 to 40 minutes.

Dissolve cornstarch in 2 tablespoons of water. Whisk into simmering sauce until desired consistency (more or less cornstarch may be needed depending on preferred thickness).

Add peppercorns, stir and heat through another 5 minutes. Adjust flavor with salt and pepper as needed.

Serve with whole roasted steak au poivre or seared steaks.
