Recipe makes 4 Servings

1 1/2 Lb thin sliced chicken breast
1/4 cup(s) lemon olive oil
2 Tsp fresh garlic, finely minced
2 Tsp dry oregano
1 1/2 cup(s) red onion, cut into 1 inch by 1 inch single layers for kabobs
1 cup(s) red bell pepper, cut into 1 inch by 1 inch slices for kabobs
1 small lemon, sliced thinly

Instructions

Cut chicken into 1 inch wide strips. Marinate in lemon olive oil, garlic, and oregano for 15 minutes.

Heat grill to medium. While grill is heating, thread chicken onto skewers, weaving it back and forth loosely on skewer.

Add onion, bell pepper and lemon slices onto each end of skewers.

Grill 6 to 8 minutes, or just until cooked through, turning skewers to brown chicken on all sides.
