Ingredients

Recipe makes 4 Servings

1 white onion, coarsely chopped
2 Tbsp olive oil
1 Tsp garlic, minced
1 green bell peppers, coarsely chopped
1 Lb chicken breast, cut into 1-inch pieces
2 andouille sausage, cut into 1/2-inch slices
8 Oz Zatarain's Red Beans and Rice Mix

Instructions

Heat oil in a large, deep non-stick skillet over medium-high heat.

Add onion, garlic, and pepper, and sauté 2 minutes.

Add chicken, and sauté 3 minutes.

Add sausage, and sauté 2 minutes.

Stir red beans and rice mix and 3 cups water into chicken and sausage mixture; bring to a boil.

Reduce heat to medium-low and simmer covered 10 minutes, then uncover and cook 10 minutes.
