2 Lb beef shoulder
1 Tbsp olive oil
2 medium poblano pepper(s), seeded and chopped
1 large white onion(s), chopped
3 fresh garlic clove(s), crushed
1 Tsp kosher salt
1/2 Tsp ground cumin
1/2 Tsp ground black pepper
1/2 Tsp chili powder
1 large tomato, chopped
1 large tomatillo(s), chopped
3/4 cup(s) reduced sodium beef broth
2 Tbsp all purpose flour

Instructions

Trim fat from steak and cut into 3/4-inch cubes.

Heat oil in a 4-quart stock pot over medium temperature.

Sauté poblano pepper, onion, garlic and seasonings 3 minutes.

Stir in tomato and tomatillo and sauté 3 additional minutes.

Add beef cubes to pot and stir to blend with seasonings.

Whisk together broth and flour until smooth.

Pour broth over beef mixture and stir.

Bring to a slow boil.

Reduce heat to low.

Simmer, covered, 1 1/2 to 2 hours or until beef is tender.Stir occasionally.
