2 Tbsp sweet paprika
2 1/2 Tsp H-E-B Iodized Salt
1 Tsp Hill Country Fare Onion Powder
1 1/2 Tsp Hill Country Fare Garlic Powder
1 1/2 Tsp Central Market Organics Ground Cayenne Pepper
2 Tsp Hill Country Fare Lemon Pepper Marinade
1 Tsp H-E-B Organic Thyme
1 1/2 Tsp Adams Basil
6 Fresh Catfish Fillet
1 cup(s) unsalted butter, melted

Instructions

Heat a large cast iron skillet over high heat (usually takes about 10 minutes).

In a small bowl, combine paprika, salt, onion powder, garlic powder, cayenne pepper, lemon pepper marinade, thyme and basil.

Keep fillets refrigerated until ready to use. Dip each fillet in the melted butter, so that both sides are well coated.

Sprinkle seasoning mix on both sides. Use 1 tablespoon of seasoning mix per fillet, patting in by hand.

Place seasoned fillet on wax paper while preparing others.

When done, place three fillets in a hot skillet. Drizzle each with one tablespoon of melted butter. There will be a lot of smoke, so kitchen should be well ventilated.

Cook quickly, about two minutes per side. Remove to a warm platter.

Repeat process with remaining fillets. Add salt and serve immediately with lemon wedges.
