Blackened Catfish with Cheesy Cauliflower Grits

2 raw catfish fillets
1 Tbsp blackened seasoning, divided use
7 Oz cauliflower rice
2 Tbsp diced bell pepper & white onion
1/3 cup(s) sharp cheddar cheese

Instructions

Season catfish with 1/2 tablespoon of blackened seasoning.

Heat 1 tablespoon of oil in a large skillet set over medium-high heat. When oil just begins to smoke, add fish fillets, and cook 4 minutes per side. Transfer to a plate and keep warm.

Drain oil from pan and add cauliflower rice, remaining seasoning, and bell pepper and onion mix. Cook for 2 to 3 minutes, stirring frequently.

Add cheese and 1/4 cup water and stir until cheese is melted. Serve fish over cauliflower mixture.
