Recipe makes 4 Servings

1 Tbsp olive oil
4 Beyond Meat Hot Italian Sausage
1 1/2 cup(s) yellow onions, julienned
1/2 cup(s) Central Grocery Olive Salad
16 Oz penne pasta, cooked, rinsed, and lightly oiled
4 Oz mozzarella cheese, shredded
2 Tbsp Go Veggie Parmesan

Instructions

Place a large skillet over medium-high heat. Add oil to hot pan and swirl to coat.

Add sausage links and cook 6 to 8 minutes, turning to brown each side. Remove to a cutting board and slice into bite size rounds.

To same pan, add onions and cook 2 minutes until softened. Stir in olive salad and cook 30 seconds.

Add cooked pasta and sliced sausage and toss until heated through. Fold in shredded cheese and remove from heat. Garnish with Parmesan cheese if desired.
