2 Lb baby carrots, cut in half lengthwise
2 Tbsp Extra Virgin Olive Oil
1 Tsp Mi Tienda Barbacoa Seasoning

Instructions

Preheat oven to 400°F.

In a large bowl, combine carrots, olive oil, and barbacoa seasoning. Toss well.

Spread carrots out on a sheet pan lined with parchment paper then roast 30 to 40 minutes or until nicely caramelized.

Season to taste with salt and pepper as needed. Allow to cool slightly before serving.
