Recipe makes 22 Servings

5 Lb Small red potatoes, scrubbed and cut in quarters
1/2 cup(s) Mayonnaise
9 Oz Bacon jam
1/2 cup(s) Red onions, diced
1 cup(s) Fully cooked bacon, crumbled
1/2 cup(s) Red bell pepper, chopped
1/2 cup(s) Celery stalks, chopped
1/8 Tsp Kosher salt
1/8 Tsp Ground black pepper

Instructions

Place potatoes in a large pot with 4 quarts water; bring to a boil over high heat.

Reduce heat to medium; boil potatoes 15 minutes or until tender.

Drain and set aside.

Blend mayonnaise and Better Than Good Bacon Jam in a large serving bowl.

Add onions, bacon, peppers, celery, salt, pepper, and seasoning potatoes; toss gently.

Serve while still warm or chill thoroughly and serve cold.
