Avocado Stuffed Potatoes

3 baking potato
1 cup(s) H-E-B Sour Cream
1 cup(s) Large Hass avocado, diced
2 Tsp H-E-B Iodized Salt
1/8 Tsp H-E-B Black Pepper
3 Tbsp unsalted butter

Instructions

Bake potatoes in preheated (375°F) oven until done.

Half the potatoes lengthwise and scoop out the inside carefully.

Retain skins.

Whip the potato pulp with sour cream, avocado, salt and pepper.

Fill the potato skins.

Add bits of butter on top, and bake in oven for about 10 minutes or until lightly browned.
