Avocado Shrimp Cocktail

1/4 cup(s) white wine
1 lemon, juiced and divided
1 1/2 cup(s) cooked or raw shrimp (peeled & deveined, 41 - 50 count)
1/2 cup(s) red onion, diced small
1/2 cup(s) Roma tomato, diced small
1/4 cup(s) fresh cilantro, chopped
1 avocado, cut in half (remove meat and save the skins)
1/8 Tsp cayenne pepper
1 Tsp salt

Instructions

In a medium pot or skillet, combine white wine, lemon juice, salt and 1 cup water. Bring to a simmer.

Add shrimp to pot and bring to a boil. Remove from heat and allow the mixture to sit so the shrimp finish cooking. If using raw shrimp, they are done when brightly colored and opaque.

In a small bowl, combine onion, lemon juice, Roma tomato, cilantro, avocado, and cayenne pepper.

Stir to begin breaking down the avocado; after a few minutes mixture will become slightly creamy.

Add cooked shrimp and toss to combine. Add salt and cayenne as desired.

Fill each ½ avocado skin with shrimp cocktail mixture. Serve chilled or fresh at room temperature.
