4 Tbsp coconunt oil
4 Oz H-E-B Unsweetened Apple Sauce
1/4 cup(s) brown sugar
1 large egg
1 cup(s) banana, ripe and mashed
1 cup(s) H-E-B Nonfat Greek yogurt
1 cup(s) whole wheat flour
1 cup(s) all purpose flour
1 Tsp baking powder
1 Tsp baking soda
1 Tsp ground cinnamon
1/2 Tsp nutmeg
1/2 Tsp salt
2 cup(s) apples, peeled and chopped

Instructions

Preheat oven to 350°F and spray 2 muffin tins with non-stick spray.

In a large bowl using hand mixer, cream coconut oil, apple sauce and brown sugar. Add egg and mix until combined then add banana and yogurt.

In a separate large bowl, combine all dry ingredients.

Slowly add dry ingredients to wet ingredients. Mix just until wet, batter should be a bit lumpy.

Mix in apples with a spoon.

Spoon batter into prepared muffin cups.

Bake 20 to 25 minutes or until a toothpick inserted into center comes out clean.

Remove muffins from tin and place on a cooling rack.
