Tuna and Compressed Watermelon

Recipe makes 12 Servings

1 large seedless watermelon
3 ahi tuna steaks, thawed in pkg. overnight in refrigerator for best results
12 Tbsp Tiger Cry Sauce, recipe on heb.com

Instructions

Slice the root and blossom ends off the watermelon so it has 2 flat sides.

Place watermelon on one of the flat sides and begin to remove rind with a large knife, 1 little petal at a time.

Once rind has been completely removed, slice watermelon into 1 inch thick steaks.

Place watermelon in vacuum packing bags. Use vacuum sealer to suck air completely out. The watermelon should turn very dark red if done right. Set aside for 5 minutes then remove vacuum bag.

Slice watermelon and tuna into 1/2 x 1 inch squares.

Place watermelon on a plate then top with a piece of tuna and a little Tiger Cry Sauce. Serve cold.
