Chocolate Tart

9 Oz Nabisco Famous Chocolate Wafers
4 Tbsp salted butter, melted
1 1/4 cup(s) granulated sugar, divided use
3 1/2 cup(s) heavy cream, divided use
1 1/2 Tbsp vanilla bean extract, divided use
10 Oz 60% bittersweet chocolate chips
2 large eggs
1/2 Tsp salt

Preheat oven to 350°F.

Place wafers, melted butter, and 1/4 cup sugar in a food processor. Pulse until it has the texture of sand. Transfer mixture to a 9 inch tart pan and press firmly to a 1/4 inch thickness over the bottom and up the sides of the pan.

Place on a sheet pan and bake 15 minutes. Remove from oven and allow to cool.

Meanwhile, combine 1.5 cups heavy cream, 1/2 cup of sugar and 1 tablespoon of vanilla in a small pot. Bring to a simmer then remove from heat.

Place chocolate chips in a medium bowl and pour the hot cream over the chocolate. After 5 minutes, carefully stir until chocolate is melted.

Add eggs and salt to the chocolate mixture and stir until completely incorporated.

Pour chocolate mixture into the cooled tart shell and place in the oven.

Bake 30 minutes or until tart has set but center is still a little loose. Remove from oven and let cool completely before refrigerating.

Add remaining cream, sugar, and vanilla to a bowl and mix with a hand mixer until it forms stiff peaks. Transfer to a piping bag.

Pipe whipped cream in small dots around the edge of tart moving inward until covered.

Slice and serve.
