Zucchini Spirals with Basil and White Beans

Ingredients
- 1 tbsp Canola oil with garlic flavor
- 1 cup Sweet tomatoes
- 15 oz Great Northern Beans, rinsed and draind
- 10.7 oz Zucchini spirals
- 3 tbsp Basil paste
- 1/2 cup Vegan mozzarella
Instructions
- Put oil in a large skillet over medium-high heat. Add in cherry tomatoes and white beans. Sauté until tomato skins begin to blister.
- Then add in zucchini spirals and basil. Cook just until spirals begin to soften. Remove from skillet and divide evenly into 2 bowls. Top with cheese and serve.
