Zucchini Noodles with Simple Roasted Tomato Sauce

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 8 oz Angel sweet tomatoes
  • 1/2 tsp Himalayan pink salt
  • 2 tsp Fresh garlic clove, finely minced
  • 1 tbsp Balsamic vinegar reduction
  • 1 tbsp Fresh basil leaves, finely chopped
  • 10.7 oz Zucchini spirals

Instructions

  1. Heat a large skillet over medium high heat.
  2. Add olive oil, tomatoes and salt until tomatoes skins begin to brown and shrivel.
  3. Smash tomatoes gently with back of a spoon.
  4. Add garlic and balsamic, reduce heat to medium and simmer gently for 3 to 4 minutes.
  5. Add fresh basil and zucchini to skillet and toss to coat.
  6. Cover and simmer 5 to 6 minutes, or until zucchini are tender firm. Serve immediately.
  7. Serve with freshly grated Parmesan cheese if desired.
