Zucchini Noodles with Garlic Tomato Sauce

Serves 3
Ingredients
- 3 tbsp Extra virgin olive oil
- 1 pt Cherry tomatoes, cut in half long ways
- 2 Fresh garlic clove(s), minced
- 1 tsp Kosher Salt
- 2 cups Baby spinach, chopped and packed into cup for measuring
- 10.7 oz Zucchini spirals
- 2 tbsp Grated Parmesan cheese, grated
Instructions
- Heat a large skillet over medium-high heat.
- Add oil, tomatoes, garlic and salt to pan. Cook and stir until tomato skins begin to brown, smashing tomatoes gently with back of a spoon as they cook. Simmer about 3 to 4 minutes.
- Add spinach and zucchini spirals. Stir gently with tongs to coat spirals with oil and sauce.
- Cook 3-4 minutes, or until noodles begin to soften slightly.
- Remove pan from heat and divide noodles and pan sauce between 2 plates. Sprinkle with cheese and serve immediately.
