Zucchini Noodles with Fresh Pecorino Tomato Sauce

Serves 4

Ingredients

  • 3 Medium zucchini squash, (about 20 oz)
  • 2 tbsp Extra virgin olive oil
  • 1/2 tbsp Crushed red pepper flakes
  • 1 Small fresh lemons, very finely zested (about 1 teaspoon)
  • 2 tsp Fresh garlic clove, finely minced
  • 1 Medium Fresh Rosemary, leaves removed from woody stem
  • 2 tsp Anchovy paste
  • 1 pt Sweet Tomatoes, cut in half the long way
  • 1 oz Pecorino Romano cheese, shredded
  • 6 Medium fresh basil, roughly chopped

Instructions

  1. Using a spiralizer blade prepare zucchini noodles and set aside (can also substitute or pre-sliced zucchini noodles).
  2. Heat a large skillet over medium-high heat. Add oil, red pepper flakes, lemon zest, garlic, rosemary and anchovy paste to skillet. Sauté for 1 minute to infuse oil with flavors.
  3. Add tomatoes and cook for an additional 3 to 4 minutes, just long enough to wilt tomatoes slightly. Remove from heat.
  4. Add zucchini noodles and cheese and toss gently to coat. Cover with a lid for 1 to 2 minutes, just to heat noodles through. Garnish with fresh basil and serve immediately.
