Zucchini Fries

Ingredients

  • 6 Smoked turkey bacon
  • 1/2 cup Unbleached all purpose flour
  • 1 1/4 cups Real egg whites
  • 2 tbsp Mild salsa
  • 1/4 tbsp Garlic powder
  • 1 cup Whole wheat bread crumbs
  • 3 Zucchini squash, cut into fry slices
  • 1/8 tsp Kosher salt

Instructions

  1. Preheat oven to 400°F.
  2. Spray a baking sheet with nonstick spray and set aside.
  3. In a large skillet, cook turkey bacon on medium-high heat until crisp.
  4. Remove to paper towel to cool. Chop bacon into small pieces and set aside.
  5. Use three pie pans or plates to set up a breading station.
  6. Place flour in first pan; eggs, salsa and garlic powder in second; and bread crumbs and bacon in third.
  7. Coat each zucchini fry with flour, dip in egg mixture and toss in bread crumbs. Place on prepared baking sheet.
  8. Spray top side of fries with cooking spray and bake 20 minutes or until crisp. Sprinkle with salt and serve.
