Zucchini and Sweet Corn Fritters

Serves 6

Ingredients

  • 1 Large zucchini squash, (or 2 small - about 2 cups total when shredded)
  • 1/2 cup Sweet Corn on the Cob, cut off cob
  • 1/4 cup Red onions, very finely diced
  • 1/4 cup Red bell pepper, very finely diced
  • 1 tsp Serrano pepper(s), seeded and very finely diced
  • 2 tbsp Fresh cilantro, finely chopped
  • 1 Large eggs
  • 1/4 cup Low Fat Cultured 1% Milkfat Buttermilk
  • 1/4 cup Potato starch
  • 1/2 tsp Baking soda
  • 3/4 cup Panko Plain Bread Crumbs
  • 2 cups Vegetable oil, (or other neutral oil for frying)

Instructions

  1. Shred zucchini into very fine shreds. Spread out on a hand towel, salt lightly and allow to sit for 15 to 20 minutes.
  2. Roll up towel and squeeze firmly to draw out excess water. Add zucchini to a large bowl followed by corn, onions, bell pepper, serrano pepper and cilantro.
  3. In a small bowl, whisk together egg, buttermilk, potato starch, baking soda and panko breadcrumbs. Gently stir through zucchini mixture.
  4. Preheat a large skillet over medium-high heat. Add oil and heat until it begins to shimmer slightly.
  5. Form zucchini mixture into 2-inch patties and gently lower into hot oil. Cook about 2 to 3 minutes on each side, or until lightly browned on both sides.
  6. Transfer to a paper towel lined plate to drain excess oil. Season with salt and pepper as desired.
  7. Chef's Note: These make a great appetizer or side dish. Drizzle with a little ranch dressing if desired.
