Zoodle Ramen

Ingredients

  • 2 tsp Anchovy paste
  • 1 tbsp Tahini paste
  • 2 tsp Gochujang sauce
  • 1 tbsp Fresh ginger root, grated
  • 2 tsp Lower sodium soy sauce
  • 6 cups Reduced Sodium Chicken Broth
  • 4 Baby bok choy, quartered
  • 10.7 oz Veggie Noodle Co. Zucchini Spirals
  • 1/4 cup Green onion(s), chopped
  • 8 oz Shiitake mushrooms, sliced

Instructions

  1. Combine anchovy paste, tahini, gochujang, ginger, and soy in a small bowl to make a paste.
  2. Combine the paste with the broth.
  3. Bring chicken broth to a simmer. Add bok choy to the liquid and simmer for 2 to 3 minutes then remove.
  4. Divide zucchini noodles and bok choy among 2 bowls and ladle the broth over top.
  5. Garnish soup with scallions and shiitake mushrooms. Serve immediately and enjoy!
