Yucca Mash with Orange Pepper

Ingredients
- 1 1/2 lb Yuca root, peeled and cut into 1 inch pieces
- 1 lb Baking potato, peeled and cut into chunks
- 2 Fresh garlic clove(s)
- 2 tbsp Extra virgin olive oil
- 1 tsp Mi Tienda Orange Pepper Seasoning
Instructions
- Place yucca in a medium pot and fill with water and season generously with salt. Bring to a rapid boil for 5 to 8 minutes until water becomes murky then drain, add potatoes, then cook until potatoes are tender.
- Drain yucca and potatoes and return to pan. Let stand 15 minutes or so to allow excess moisture to evaporate.
- Return pan to low heat, and add in olive oil and orange pepper. Gently fold until combined then serve.
- Chef's Note: Do not over mix yucca or it will get gummy.
