Yucca Fries with Chipotle Five Spice

Serves 6

Ingredients

  • 2 Medium yuca, peeled and ends trimmed
  • 3 cups Peanut oil, or as needed for frying
  • 1 tbsp Five spice rub, as needed for seasoning

Instructions

  1. Fill a large pot of water and bring it to a boil.
  2. Cut yucca in half to make smaller chunks. Add yucca to boiling water and cook until it is just soft enough to pull fibers apart.
  3. Drain yucca and pull apart to resemble fries or sticks. Allow to cool, meanwhile heat oil.
  4. Add oil to a Dutch oven and bring temperature between 325˚ to 350˚F. Fry yucca in batches until golden brown and crispy.
  5. Drain fried yucca onto a paper towel and dust liberally with 5 spice rub. Repeat frying and seasoning with each batch.
