Yucca Fries with Chipotle Five Spice

Ingredients
- 2 Medium yuca, peeled and ends trimmed
- 3 cups Peanut oil, or as needed for frying
- 1 tbsp Five spice rub, as needed for seasoning
Instructions
- Fill a large pot of water and bring it to a boil.
- Cut yucca in half to make smaller chunks. Add yucca to boiling water and cook until it is just soft enough to pull fibers apart.
- Drain yucca and pull apart to resemble fries or sticks. Allow to cool, meanwhile heat oil.
- Add oil to a Dutch oven and bring temperature between 325˚ to 350˚F. Fry yucca in batches until golden brown and crispy.
- Drain fried yucca onto a paper towel and dust liberally with 5 spice rub. Repeat frying and seasoning with each batch.
