Yogurt Pimento Cheese

Ingredients

  • 1 cup Manchego cheese, shredded
  • 1 cup Monterey jack cheese, shredded4122090313
  • 1/2 cup Piquillo peppers, finely chopped
  • 1/3 cup Fresh chives, chopped
  • 1 Garlic clove, minced
  • 1 cup Mild cheddar cheese, shredded, shredded
  • 1 1/2 cups Non-fat plain Greek yogurt
  • 1 tbsp Smoked paprika

Instructions

  1. In a large bowl combine all the cheeses, chopped piquillo pepper, minced garlic, chives, yogurt and smoked paprika together.
  2. Mix everything thoroughly and add more Greek yogurt if needed to make it more creamy if needed. Season to taste with salt and pepper and refrigerate to allow flavors to meld.
