Yogurt Olive Oil Cake

Ingredients

  • 2 cups All purpose flour
  • 1 cup Granulated sugar
  • 1 cup Whole milk Greek yogurt
  • 1 cup Good quality extra virgin olive oil
  • 3 Large eggs
  • 1 tbsp Lemon zest
  • 1 tbsp Orange zest
  • 1 tbsp Pound cake flavor extract
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Fine sea salt

Instructions

  1. Preheat oven to 350ºF. Grease a 9-inch round cake pan and set aside.
  2. In the bowl of a stand mixer, add all ingredients and turn mixer on lowest speed. Mix until everthing just begins to come together.
  3. Once mixture is fairly well incorporated, turn mixer up to medium-high speed and mix for exactly 2 minutes.
  4. Pour into a greased 9 inch cake round pan evenly distribute batter with a spatula.
  5. Bake for 30 to 45 minutes or until a toothpick inserted in center of cake pulls out clean.
  6. Cool for at least 30 minutes before removing from pan, cutting and serving.
