Yogurt Cake made with Non-dairy Yogurt

Ingredients
- 1 cup Higher Harvest Dairy Free Vanilla Flavored Protein Yogurt
- 1/3 cup Canola oil, or any neutral flavored oil
- 1/3 cup Silk Dairy-free Heavy Whipping Cream
- 1 Large egg
- 1 tsp Fresh lemon zest
- 2 tsp Vanilla extract
- 1 cup Granulated sugar
- 2 cups All purpose flour
- 1/2 tsp Fine sea salt
- 1 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/4 cup Powdered sugar, as needed for garnish
Instructions
- Preheat oven to 350ºF. Spray a standard cake pan liberally with baking spray and set aside.
- In a stand mixer with a paddle attachment, add yogurt, oil, heavy cream, egg, lemon zest, vanilla extract, sugar, flour, salt, baking powder, and baking soda.
- Turn mixer to medium speed and mix until batter is smooth with no lumps, approximately 3 to 4 minutes. Scrape down sides of bowl as needed.
- Pour batter into greased prepared cake pan. Bake for 30 to 45 minutes or until a toothpick inserted in center of cake pulls out clean.
- Remove cake from oven and allow to cool completely before removing from pan.
- Garnish cake with powdered sugar and serve.
