Yogurt Braised Beef

Ingredients

  • 2 1/2 lb Prime 1 boneless chuck roast, 2.5 to 3 lbs cut into approximately 2 inch cubes
  • 1/2 cup Whole milk Greek yogurt
  • 1/2 cup Fresh mint, chopped or minced
  • 1/2 cup Fresh parsley, chopped or minced

Instructions

  1. Preheat oven to 250ºF.
  2. In a bowl combine meat, yogurt and a generous pinch of salt and pepper.
  3. Toss everything to coat and let sit at room temperature for at least 30 minutes or while oven is preheating.
  4. Place marinated beef in an oven-safe casserole dish and cover tightly with foil. Place in oven and cook for 5 to 6 hours or until beef is fall apart tender and shreds easily.
  5. When beef is done, set aside to rest for 10 to 15 minutes then mix and shred meat so juices are reabsorbed and mixed in.
  6. Add mint and parsley just before serving and mix well. Season to taste as needed.
  7. Chef's Note: This recipe works very well in the crockpot on lowest setting for at least 8 hours.
