Yogurt Braised Beef

Serves 8
Ingredients
- 2 1/2 lb Prime 1 boneless chuck roast, 2.5 to 3 lbs cut into approximately 2 inch cubes
- 1/2 cup Whole milk Greek yogurt
- 1/2 cup Fresh mint, chopped or minced
- 1/2 cup Fresh parsley, chopped or minced
Instructions
- Preheat oven to 250ºF.
- In a bowl combine meat, yogurt and a generous pinch of salt and pepper.
- Toss everything to coat and let sit at room temperature for at least 30 minutes or while oven is preheating.
- Place marinated beef in an oven-safe casserole dish and cover tightly with foil. Place in oven and cook for 5 to 6 hours or until beef is fall apart tender and shreds easily.
- When beef is done, set aside to rest for 10 to 15 minutes then mix and shred meat so juices are reabsorbed and mixed in.
- Add mint and parsley just before serving and mix well. Season to taste as needed.
- Chef's Note: This recipe works very well in the crockpot on lowest setting for at least 8 hours.
