Wild Western Burger

Serves 2

Ingredients

  • 1/4 cup BBQ sauce, as needed
  • 1/4 cup Better Than Good Bacon Jam, as needed
  • 1 tsp Kosher salt, plus more as needed
  • 2 tbsp Grapeseed oil
  • 1 lb Grass fed ground beef, formed into 2 or 3 patties
  • 1 tsp Ground black pepper, plus more as needed
  • 2 Hamburger buns, as needed
  • 8 slices Fully cooked bacon, plus more as needed
  • 2 Large sweet onions, thinly sliced

Instructions

  1. Preheat grill to medium-high.
  2. Meanwhile, place a non-stick skillet over medium heat and add oil, onions and a pinch of salt. Stir-fry 8 to 10 minutes, stirring constantly.
  3. Lower heat and continue to cook, stirring frequently, until onions are golden brown and smell sweet. Remove to a serving bowl to cool.
  4. Season both sides of burgers with salt and pepper and grill until desired doneness is reached (internal temperature should be at least 155ºF).
  5. To assemble burgers, spread bacon jam on bottom bun, and top with meat, caramelized onions, bacon, BBQ sauce and top bun.
