Whole Roasted Cauliflower with Scallion Tahini

Serves 4
Ingredients
- 1 head Head of cauliflower, left whole, washed and green roots trimmed
- 2 tbsp Fresh lemon juice
- 1/2 cup Tahini paste
- 2/3 cup Cold water
- 1 tbsp Extra virgin olive oil, plus more as needed
- 1/2 cup Green onion, diced
- 1 tsp Ground cumin
Instructions
- Preheat oven to 400ºF.
- Combine water, tahini, green onions, lemon juice, and cumin in a blender and blend until smooth.
- Season to taste with salt and pepper. Refrigerate until ready to use to allow flavors to meld.
- Line a sheet pan with foil. Place trimmed cauliflower on foil. Evenly drizzle oil over cauliflower and liberally season top with salt and pepper.
- Roast for 25 to 30 minutes or until cauliflower is nicely browned and just tender when poked with a knife.
- Remove from oven. While hot, liberally brush tahini sauce over cauliflower. Cool slightly before cutting and serving.
- Chef's Note: Refrigerate leftover tahini sauce for up to one week.
