Whole Roasted Cauliflower with Scallion Tahini

Serves 4

Ingredients

  • 1 head Head of cauliflower, left whole, washed and green roots trimmed
  • 2 tbsp Fresh lemon juice
  • 1/2 cup Tahini paste
  • 2/3 cup Cold water
  • 1 tbsp Extra virgin olive oil, plus more as needed
  • 1/2 cup Green onion, diced
  • 1 tsp Ground cumin

Instructions

  1. Preheat oven to 400ºF.
  2. Combine water, tahini, green onions, lemon juice, and cumin in a blender and blend until smooth.
  3. Season to taste with salt and pepper. Refrigerate until ready to use to allow flavors to meld.
  4. Line a sheet pan with foil. Place trimmed cauliflower on foil. Evenly drizzle oil over cauliflower and liberally season top with salt and pepper.
  5. Roast for 25 to 30 minutes or until cauliflower is nicely browned and just tender when poked with a knife.
  6. Remove from oven. While hot, liberally brush tahini sauce over cauliflower. Cool slightly before cutting and serving.
  7. Chef's Note: Refrigerate leftover tahini sauce for up to one week.
