White Bean and Collard Minestrone

Serves 8
Ingredients
- 1 tbsp Extra virgin olive oil
- 1 1/4 cups Red onion, finely diced (about 1 medium sized)
- 1 1/2 tbsp Fresh garlic clove, finely minced
- 1 cup Red bell pepper, finely chopped
- 12 oz Collard greens, (about 1 large bunch) stemmed and very thinly sliced
- 2 lb Smoked ham hocks, (or leftover ham bone with some meat on it)
- 28 oz Canned diced tomatoes
- 32 oz Chicken broth
- 30 oz Cannellini beans, drained
- 2 Medium bay leaves
- 1 tsp Ground black pepper
Instructions
- Heat Instant Pot on "Sauté" setting. Add oil, onion, garlic and bell pepper to Instant pot and cook for 3 to 4 minutes, just to begin to soften.
- Add collard greens, ham hocks, diced tomatoes, chicken stock, beans, bay leaf and thyme to pot. Stir to combine. Seal pot and set on "Soup" setting. Adjust time to 20 minutes.
- After cooking time is complete, vent to release steam and serve. Serve with a sprinkle of Parmesan cheese and a slice of crusty bread if desired.
- Chef's note: Can substitute a leftover ham bone with a little meat left on the bone if desired.
