Whipped Acorn Squash

Ingredients
- 2 Acorn squash, cut in half and seeds removed
- 1 tsp Extra virgin olive oil
- 4 tbsp Unsalted butter
- 1/2 cup Fischer & Wieser Hatch Chile Jalapeño Jam
Instructions
- Preheat oven to 400°F.
- Evenly brush cut sides of squash halves with oil and season with salt and pepper. Place in a baking dish and bake 45 minutes or until tender.
- Carefully remove squash from skins and place in a bowl along with butter and jam. Mix well until light in texture and all ingredients are combined. Serve immediately.
