West Texas Brisket

Ingredients
- 1 cup True Texas BBQ Salt & Pepper Blend
- 13 Mesquite grillwood mini logs
- 13 lb Prime brisket, trimmed
Instructions
- Start a fire in the smoker using the mesquite logs and bring temperature to 225ºF.
- Meanwhile, place brisket on foil or a large cutting board.
- With fat side up, trim the white cap off the top, only leaving a little around the largest part of the brisket.
- Once trimmed, generously season entire brisket with True Texas BBQ Salt & Pepper Blend.
- When smoker is at 225ºF, place brisket fat-side up on grill, away from the heat.
- Smoke brisket for 7 hours keeping temperature between 225º and 250ºF.
- After 7 hours, check the brisket for a nice bark then wrap tightly with butcher paper.
- Return brisket to smoker and continue cooking for 1 hour per pound.
- When cook time is complete, remove brisket from smoker and place in a large ice chest. Rest for 2 hours before slicing.
