Unsaved West Coast Style Blackened Tofu Bowl

Ingredients

  • 1/4 cup Cilantro Greek yogurt dip
  • 8 oz Firm tofu, water drained and tofu squeezed dry
  • 1 tbsp Less sodium taco seasoning mix
  • 4 oz Mango pico de gallo
  • 10 oz Shredded cabbage

Instructions

  1. Cut tofu into small cubes and toss with taco seasoning to evenly coat.
  2. Add 2 Tbsps. olive oil to a medium non-stick pan set over medium-high heat., Stir-fry tofu cubes until nicely browned and crisp, approximately 8 to 10 minutes.
  3. Add cabbage to a serving bowl and top with fried tofu and pico de gallo. Toss with cilantro lime yogurt before serving.
