Unsaved Watermelon Salsa Fresca with Coconut Sugar

Ingredients

  • 2 cups Watermelon, finely chopped
  • 1/2 cup Hot house cucumbers, finely chopped
  • 1/2 cup Honeydew melon, finely chopped
  • 1/4 cup Red onions, thin sliced
  • 1 Large jalapeño pepper, seeded and sliced
  • 1/4 cup Fresh cilantro, minced
  • 1 tbsp Fresh basil, chopped
  • 1 tbsp Fresh mint, chopped
  • 2 Limes, juiced
  • 1/4 cup Coconut sugar
  • 1/4 cup Water

Instructions

  1. Mix all ingredients, except coconut sugar and water, and chill at least 30 minutes to allow flavors to blend.
  2. In a small saucepan place 1/4 cup of coconut sugar with 1/4 cup of water and bring to a simmer to melt the sugar mixture.
  3. Cool the coconut and sugar mixture in refrigerator then pour over the salad like a dressing, toss everything to combine.
